Remove and scrape all the seeds and pumpkin pulp form the inside of the pumpkin. Ensure you do not puncture the pumpkin walls or bottom, as otherwise the broth will leak from the pumpkin and the recipe will not work.
Chop all the vegetables, 1 inch rough chop. You want the vegetable chop to be large so that they slowly release the juices overtime into the pumpkin well. I also throw in the baby bok choy leaves.

Place the pan and the pumpkin on your dinner table
Move the pan to the center of your table. It is recommended to not try to pick the pumpkin up off the pan as its very soft and may collapse. If you do opt to move your pumpkin, ensure it's a an extremely large bowl that will allow juices to leak.

Making It a Family Event (Carving & Cooking with Kids)
Pairing pumpkin carving with a cozy kitchen project creates a full day of autumnal fun:
• Pick Your Pumpkins: Grab two different kinds—a smooth, firm edible baking pumpkin for the main course (keep it un-carved except for a neat top lid) and classic jack-o'-lantern carving pumpkins for the kids to design with marker and safety tools.
• Seed Sorting Station: While you prep the cabbage, carrots, onions, herbs, and the 3-to-4 lb whole chicken for the inside of the cooking pumpkin, let the kids scoop out the slimy pulp and separate the seeds. Toss the seeds with a little olive oil and salt for an easy oven-roasted snack.
• Face the Food: Draw a friendly, goofy face on the cooking pumpkin with a washable marker before it goes into the oven. When it comes out hot and tender, it looks like a warm, glowing centerpiece straight out of a storybook.
Every version keeps its source.Forking starts privately and preserves creator credit.
Apply avocado oil or high heat oil across the entire exterior of the pumpkin, including bottom of pumpkin and stem.

Cook the pumpkin
Place the pumpkin on a deep-pan (important), place it at the bottom rack of your oven to prevent burning.

Check chicken
I Recommend a meat thermometer to watch the temperature of your chicken. The thigh of the chicken should be around 170. Pull and rest the pumpkin for 15 minutes before opening the lid.
